Mexico has an abundance of amazing delectable salsas but the one I cannot get enough of is the salsa asado/salsa rustica at El Calif in CDMX.It’s smoky, hot, bright. It’s so addictive. I need it straight into my veins, quite honestly.
Anyone here have a recipe for *that* salsa asado? And if not that one, a recipe that you use please?

Hi! I’m new to the sub, I see you didn’t get a recipe and I have one that looks very similar. We call it salsa tatemada. We simply fire roast jalapeños, onions and tomates, on a charcoal grill on low heat. It can take up to 20 min. When they’re soften and black all over we let them cool and peel the tomatoes and peppers. Then roughly chop them up. Here is where the flavor can vary form cook to cook: some add lime juice, cilantro and oil, others only and salt. You can play around to find that specific note you’re looking for. Hope this helps.
