Some basic Pico I made last night. Ended up using all the ingredients minus 1.5 jalapenos, girlfriend wanted some for once so I had to tamper down the heat a little.
I also added some garlic this time but wasn’t too huge on it, want bad by any means, just different.
Generally I’ll dice everything first and mix small amount at a time as I’m terrible with ratios. I judge my mixing ratio by color so I’ll just go until I run out of one ingredient. Got pretty lucky this time and had a near perfect amount of everything aside from the jalapeno.

I always add a splash of tequila and a healthy squeeze of lime before I let everything marry. Looks like a great ratio, though!

Hot take: Pico should always be basic. It’s a standard, a classic, a hit. No one likes a remix. Only exception, add some shredded cabbage for instant taco filler. Usually I do this for tacos de pescado but it works for basically any taco and is really good at holding salsa inside the taco.
Looks fantastic, excellent knife skills, great ingredient ratio and everything is small enough for a chicken to eat. Perfect.

My mother hates ‘spicy’ stuff, but will eat a bowl of good pico. My wife? She’d eat that stuff on a turd.

Basic pico is one of my top 3 favorites. Goes on anything even remotely Mexican and it will always make that thing better.
