Same ingredients seared vs raw


Left salsa was made with seared ingredients and the right salsa was made with fresh ingredients. The seared salsa had a much rounder taste with less bite from the raw garlic and onion. The fresh one was much greener and (believe it or not) fresh tasting. The difference sounds like exactly what you would expect but I was surprised at how significant and pronounced it was.

4 smallish Roma tomatoes
2 jalapeños
1/2 red onion
4 garlic
Salt

    Those both look great OP!
    I’ve made it like the one on the left, I’ve made it like the one on the right, I’ve made it with just roasting the garlic and half the onion… etc.
    All of them are just so damn good! Like I can’t get over how absolutely delicious homemade salsa is! **ALL** of them!
