Left salsa was made with seared ingredients and the right salsa was made with fresh ingredients. The seared salsa had a much rounder taste with less bite from the raw garlic and onion. The fresh one was much greener and (believe it or not) fresh tasting. The difference sounds like exactly what you would expect but I was surprised at how significant and pronounced it was.
4 smallish Roma tomatoes
2 jalapeños
1/2 red onion
4 garlic

Love seeing test-kitchening here!
Send me one of each and I’ll let you know what I think
Those both look great OP!
I’ve made it like the one on the left, I’ve made it like the one on the right, I’ve made it with just roasting the garlic and half the onion… etc.
All of them are just so damn good! Like I can’t get over how absolutely delicious homemade salsa is! **ALL** of them!
Both are perfect, please send samples
TIL you don’t have to roast your veggies for salsa🥸
Did you try a mix??
