
Does anyone know the name (or even better, a recipe) for the salsa typically served with pollo asado? It’s a raw tomato based salsa, similar to Pico de Gallo or Salsa Mexicana, on the spicy side which makes me guess it’s made with serranos vs. jalapenos but blended instead of chopped so it’s somewhat thin. Usually in a knotted sandwich bag included with my pollo entero and fresh tortillas.

Do you have a picture or can you link to where you got it? Pollo Asada is literally just grilled or roasted chicken and can come with basically any sauce under the sun. There isn’t like a traditional sauce that always accompanies chicken. There are quite a few thin/red/spicyish sauces within Mexican cuisine. Knowing the place you’re getting it from will also help because we can just check their google page and find out.
More than likely though, it’s just a salsa picante. Commercial options include Valentina and Tapatio. Homemade options vary a lot but there are many on google. It’s usually included on the side with antojitos in the US and certain parts of MX.

It’s just called red salsa. One thing is sometimes it looks like it’s from fresh tomatoes but it’s actually from canned and that changes the flavor.
You’d be best served by asking how exactly they make it!

It’s made out of raw tomatoes so their acidity mixes well with pollo.
