Posted a few days ago asking for tips on what salsa would be best with black beans and fried ripe plantains, common consensus seemed to be something sharp and sweet.
Decided on trying quick pickling some jalapenos and throwing those in. Kinda worked – tacos were delicious. The salsa ended up being incredibly savoury tasting, which made for a nice contrast to the plantain.
Recipe included for rules sake.
4 roma toms, roasted.
1 red pepper, roasted.
1/2 white onion
2 garlic cloves
4 quick pickled jalapenos
big bunch coriander
squeeze of tomato paste
Lime juice, salt and honey to taste
Blend and simmer everything save the seasonings, before adding them to make sure its balanced and serve.
