If using a blender I keave them on, if a molcajete I peel them and the tomato skins. My grandmother always said if you didn’t it was like cucaracha wings and now I can’t not think about it

Depends on which chilies. Hatch I peel, jalapeños and Serranos and habeneros usually not. Peeling definitely reduces the charred flavor. But really thick skin bits can be annoying.

I’ve only roasted salsa once and I peeled all the ingredients. I didn’t get much char flavor so next time I will leave some on.

If u want a thicker salsa/sauce maybe the pectin from the skin would be nice. If thinner is what u want, then peel?
