I use guajillos and ancho when I make chili paste. I love them but they are a bit tedious compared to bigger peppers.

I buy guajillos in five pound bags.
Wonderful things.
You don’t have to toast them until they’re smoldering.

I often use a propane burner I have on my deck.
I love those chilis! Good in so many things.
