
It is sweet corn season in Indiana. 🌽
I’m from a family a farmers, and my brother-in-law and sister shared some ears with me, so I whipped this up this morning. Such a refreshing side for our Sunday family lunch.
Corn Salsa:
Ingredients:
1/2 cup cilantro
7 ears of corn
2 jalapeño peppers
2 Poblano pepper
3/4 cup Red onion
Juice of 5-7 limes (to taste)
Salt to Taste
Instructions:
1. Boil ears of sweet corn for 9 minutes, let cool.
2. Broil 2 poblanos for 5-10 minutes. Once finished broiling, let steam and cool in ziplock back.
3. After Poblanos have cooled, peel off skin and dice.
4. Dice jalapeños, red onion, and cilantro.
5. Once corn is cool, cut off the cob.
6. Combine all ingredients.
7. Add salt to taste (generously).
8. Add lime juice, and gently stir all ingredients.
9. Refrigerate for at least 1 hour prior to serving.
(Note: my limes were small and not super juicy this time. If you have better limes, you won’t need so many!)

Florida has some amazing sweet corn also. I can’t wait till it hits the store so I can make some of that. It looks amazing!!!
