My friend asked me to make her a salsa for when I visit this week. She wanted a tomatillo salsa and for it to be spicy. So I threw this together. It’s easily the hottest salsa I’ve made to date.
* Stem & seed Serranos, halve tomatillos, quarter onion, halve shallot. Soak Ancho & Arbol (reserve the water after). * Add Serranos, Onion, and Shallot to baking sheet. Bake on 375 for 10 minutes. * Add tomatillo and garlic to baking sheet. Raise to 400. Bake for 5-6 minutes. Remove Serranos and add to processor / blender. * Set oven to Broil on high for 2-3 minutes – Pay attention here because it’s quick. You want to pull when the tomatillos start to char. * Add all ingredients to processor / blender. Blend until you get the desired consistency. If you want it thinner, use some of the reserved chile water.

* 12 Tomatillo
* 1/2 Yellow Onion
* 5 Ancho Chiles
* 5 Serrano Chiles
* 3 Arbol Chiles
* 3 Cloves Garlic
* 1 Bunch Cilantro
* 1 Shallot
* Juice of 2 Limes
* 1.5tsp Salt
* 0.5tsp Cumin
**Recipe:**
