I like kidneys but few places stock them. Technique is soak in salty water, and if they smell a bit like piss cook them well, and the smell goes away. Must get some soon.

In my country most internals are popular (kidneys, liver, intestines, brains, testicles, etc)

Moms would cook chicken liver, heart and kidneys for caldo. Good stuff.

I love kidneys, but have never had them grilled like that. I had some at a Lebanese restaurant once, I’ve come close but never really recreated it. Sauteed lamb kidneys, about a 1/4 – 1/2 inch dice. Garlicky, with lemon, though could have been sumac. Almost dry but had a bit of a light sauce, felt like it was thickened with corn starch.
Beef kidney is pretty common here, so steak and kidney pie is a regular meal.

I stay away from organs meant to filter toxins. Not that they are not tasty.

If roasted long enough, they are very good. Doesn’t need much seasoning. Just salt, pepper, smoke, and hunger.
