


This is my first ferment. I sanitized everything with isopropyl alcohol and rinsed everything with distilled water. I made a combo mix of jalapeños, scotch bonnets, onions, garlic, and pineapple. I mixed in 3 percent by weight of non-iodized kosher salt. Then put parchment paper and a glass ferment weight and sealed with a ball airlock lid. Now I have white fuzzy mold growing in top of the liquid above the ferment weight. What should I do?

I hate to say but you should probably throw it out. Sounds like you did everything correctly so I’m not sure why it molded. Did you keep it in a dark, warm place?
It looks white. It could be Kham Yeast, a harmless biofilm common with fermentation. If the colour isn’t white, then it’s definitely mould and should be tossed and restarted.
