just found you guys. i’ve got a pretty much blank canvas pico here. what would add to change it up a bit?


when we a recipe calls for pico i always make a bunch and then use it periodically till it’s gone. scoop out a little and doctor it up to suit whatever i’m doing with it. fresh garlic is a go-to. sometimes a touch of cumin and chili powder. sometimes i just stand at the fridge with a bag of chips and go to town.

    I mean I’d use like a dozen jalapenos and maybe some serranos, but as for something that would actually change the flavor and not just be spicier, *chipotle powder*. That shit, I don’t know how I stumbled on it but it’s my secret ingredient in salsas, it rounds things round with a sweet smokey flavor in a niche all of its own.

    This is going to sound a little crazy, but I promise I’m not. Sometimes I reserve a little and drizzle balsamic glaze and put it on crostini’s for a bruschetta.

    Pickles, toasted and blitzed caraway seeds, and dill and put it on pastrami tacos

    Chopped celery, Vodka, Worcestershire sauce and tomato juice.

    I like a teaspoon of sugar in mine. It doesn’t make it sweet, just helps round out all the acids.

    Add a cucumber or two for a fresher crisper taste

    Throw some ancho powder in there and stir it around. Chipotle powder works too.
