I actually make this each week for the family. Sometimes I added the onions, sometimes I don’t. I also like to add Habanero or Serrano to increase the heat level, but some of my family can’t stand the heat 🌶️.
* 12 Roma tomato, sliced * 12 Jalapenos, sliced, leave seeds * 1/2-Full red onion * 2 heads of garlic * 1 cube bullion * Salt to taste * Cilantro garnish
Smoke at 200 for about 90min. Char on grill or in broiler. Blend and salt to taste. Add a bullion cube, secret ingredient restaurants like to use. Sprinkle cilantro on top.
If you want more heat, Habanero or Serrano are good additions. Less heat, swap some peppers with bell peppers or even just core the jalapenos.
I also like to season with a salt, pepper, paprika rub before putting in smoker. Completely optional. In case someone wonders what’s on them while on the wire racks.

Does using the rack make a big difference? I’ve always just put my veg straight on the foil, but I always flip halfway.
