Smoked, roasted salsa, that time of week again.


– 16 Roma Tomatoes
– 12 Jalapenos
– 4 Serrano
– 1 Head of Garlic
– No onion this time
– salt to taste

Smoked for 90min at 225. Roasted about 5min. Let rest until closer to room temp. Blended.

Did a partial deseed on peppers, cut the membrane enough that the bulk of seeds were able to fall out.

    When you smoke it do you leave the sheet pans under the wire racks (as sort of an indirect smoke) or put wire racks directly on the smoker?

    Thanks for posting! I have a smoker but haven’t tried this. It looks so good, definitely giving it a try this weekend. The last pic makes me hungry for some smoky salsa.
