    Tripas only if they are made right and bien dorada not a day old and dry and not with little rocks still inside of them cuz they didn’t clean them ,not slimy ,not burnt.Not much taco places know how to make tripas right. That’s why I say only if they are made right

    Need more info. Carne Asada needs to be grilled over flame but most places cook on a steam table.

    So much can be done with that texture and the flavor is just monumental.

    I’m also not one for al pastor or any of the more same ultra flavorful ones and would get bored of it

    Edit: gawddamn … Wish I could realistically afford it but buying a $30 full tongue is rough when only I will eat any in my family

    In order, I would choose carnitas, birria (if I get consommé with) and lengua.

    There are still a few that I haven’t tried though!
