
I’ve tried to modify my recipe but I can never get a nice hard cookie / polvorón type consistency with my concha topping. I do 1 to 1 to 1 ratio of flour – Lard / vegetable shortening – powdered sugar. It’s good but I want to be able to have a crunchier top. I’ve tried using butter instead and it just melted, I’ve tried using half and half butter and shortening, Ive tried using granulated sugar and it wasn’t the consistency I wanted/ it should look like this picture.
