For salsa, I take like 8-12 chiles, roast them up, and then toss them into a blender with roasted garlic, a roasted jalapeño, some oil, salt, and a touch of lime
You can also just roast them, chop them up, and then cook on a stove with a bit of water until it reduces down almost to a gravy consistency. Add that as a toping to anything!

Edit: As far as I’m concerned, using these is the only right way to make a chile relleno (I especially love to put them into burritos)
