    I made Pico earlier, the comments said I should roast it and blend it next, so I did.

    **Ingredients:**

    4 Medium sized tomatoes

    2 Jalepenos

    1/4 of a really big white onion

    A large handful of corriander

    2 tablespoons of lime juice

    1 teaspoon of Salt

    **Method:**

    Chop the tomatoes, jalapenos and onion in big chunks.

    Roast in a fry pan until they go soft and have some colour.

    Roughly chop the coriander.

    Add the softened vegetables, coriander, lime juice and salt to a blender.

    Blend until smooth but with a little bit of chunk left.

    **Outcome:**

    For me the tomato was the main flavour, a tiny bit of heat but overall very mild. Texture was soft and unoffensive.

    My wife said the coriander was the bigger flavour for her.

    **Final Judgement:**

    It is ok, but I preferred regular Pico to this.

    This isn’t pico, but the salsa looks good. You don’t always have to listen to people’s opinions here. Everything is to taste, so if you like it, continue doing it your way.

    It is call Pico de Gallo 🐓,and is very easy to make. Just cut tomato 🍅, onion 🧅, and jalapeños in small pieces add a little water a little white vinagre a little salt, chop coriander and you are done. What you did is more like salsa de jalapeño

    Pico is raw and never blended (not 100% on that second part). Salsa can be raw, cooked, or a combination of both and usually blended or roughly chopped in a food processor.

    As others have said, this is not pico de gallo but a roasted salsa (don’t be afraid to get some good charring). And thank you for adding more than two sprigs of cilantro.

  10. Looks delicious but, it’s more of just a salsa. You should roast the veg on an extremely high heat so you get the char marks on the outside without cooking the veg. I would also keep the tomatoes and jalapenos whole.

    Is it still pico if you roast it? Thought pico was fresh chopped. Roasted becomes rostizado?

    I’m all pico what lol but I get it now pico de Gallo lol ya pico is always uncooked. Salsa is cooked but when u roast it keep the tomatoes whole friend so they dnt start falling apart as shown

    Sir this is salsa. Pico de gallo is raw and chopped up in pieces, don’t forget that limón & a bit of salt.

    Roasting is done in an oven. It looks like you just fried it in a pan on the stovetop.

    Looks like you overcrowded the pan and/or not enough high heat. Your veggies didn’t char at all. I would individually char the veggies on open flame. Or pop it in the oven.

    The best Salsa is half Pico anyways. The fresh and the roasted, the firm and the soft. The sharp and the mellow. All in one.

    Just have to drain it off a little bit so it’s not quite so soupy as the combined total normally would be.
