Ingredients
For the chicken:
• 450g (1 lb) boneless, skinless chicken thighs or breasts, thinly sliced
• 1 tbsp (15 ml) soy sauce
• 1 tbsp (8g ) cornstarch
• 1 tsp sesame oil (optional)
For the sauce:
• 1 tbsp (15 ml) regular light soy sauce
• 1 tbsp (15 ml) oyster sauce
• 1 tbsp (15 ml) dark soy sauce
• 1 tbsp (15 ml) rice vinegar
• 2 tbsp sugar
• 2 tsp (4g) freshly ground black pepper (coarsely ground for best flavour)
For stir-frying:
• 2 tbsp (30 ml) vegetable oil
• 3 cloves garlic, minced
• 1 tbsp (8g) minced fresh ginger
• 1 large yellow onion, sliced. I used two small
• 1 red bell pepper, sliced
• 200g (2 cups ) button or cremini mushrooms, sliced
• 2 green onions, sliced (for garnish)
• 1 tbsp cornstarch/cornflour 2 tbsp water – slurry

NOTE: Editing error. Chicken returned to the pan after mushrooms 10:03

  3. What a great recipe. Can almost smell it from here. Never ate mushrooms growing up but as an adult I got to love them. I always stick them in my green salads. So good. I just wish my throat would tolerate spicy food. But no so i guess i could cut down on black pepper but then it wouldnt be savory black pepper chicken. Ny grandson is😊 the opposite loves everything spicy hot so i may make this one for him. Thank you chef Rik.

  6. You have me fascinated. You really can cook. Youve made a stir fry on the stove not a stew, its hard to do.
    Its a detective story, maybe a services cook, then on a ship in the FE, maybe a stint at the Dorchester who knows.
    Theres just something no one can put their finger on.

  8. For garlic and ginger paste, I like those frozen cubes you can get. However, for stir fry I like to add a small handful of matchstick-chopped ginger in there for those bursts of gingery goodness.

  9. I missed the bit that said add the cooked chicken back to the pan. I watched it 3 times. Was it there or did you forget to say it and show it?? Or am I just having a senior moment and missing things you say??

  13. That is how I stir-fry. Beef could be substituted for the chicken as well, which ironically is what my supper will be. I always cut out the green sprouts in the middle of the onions.

  14. Chef, this was amazing! I changed a couple of things up a bit, like using beef strips instead of chicken, I didn't have oyster sauce so I used hoisin sauce instead and omitted the sesame seeds because I don't like them. But wow, it tasted gorgeous. It tasted almost like beef chow mein, we were really impressed 👍🏻. Definitely going to make it again, thanks for all of your hard work 😊xx
