-Roasted Garlic
-Mayo
-Worschestshire
-Lemon
-Salt
-Cayane Powder or Paprika
Toppings:
Arugula – mixed with olive oil and lightly salt
Fried onions
Steak Sauce:
-1Shallot
-Black Pepper
-4-5 minced Garlic
-3 tbs Hennesy
-1 cup Beef Stock
-¼ cup Heavy Cream (+¼ if needed)
-1 tbs Dijon Mustard
-1 tbs Green Peppercorn
– 1 tbs green peppercorn juice
-1 tbs Worschestshire
-very little lemon juice
-⅓ cup parmesan to finish
– 1 tsp honey (optional) – helps balance the flavors
-salt to taste
Steak:
– Heavy Salt and pepper
– let it sit in the fridge for up to 24 hours
