Vegan Chili ๐ŸŒถ๏ธ๐Ÿซ˜๐ŸŒฝ๐Ÿ…๐Ÿฅ‘

Ingredients: (4 servings)

โ€ข Onion – 1 large
โ€ข Garlic – 4 cloves
โ€ข Green bell pepper – 1
โ€ข Chili pepper – 1
โ€ข Tomato paste – 2 tbsp
โ€ข Crushed tomatoes – 1 can, 14โ€“15 oz (400 g)
โ€ข Kidney beans – 1 can, 15 oz (400 g), drained
โ€ข Pinto beans or black beans – 1 can, 15 oz (400 g), drained
โ€ข Corn – 1/2 cup (80 g)
โ€ข Vegetable broth – 1 1/2 cups (360 ml)

Spices:

โ€ข Cumin – 1 1/2 tsp
โ€ข Smoked paprika – 1 tsp
โ€ข Chili powder – 1 tsp
โ€ข Oregano – 1/2 tsp
โ€ข Cocoa powder – 1/2 tsp
โ€ข Maple syrup or sugar – 1/2 tsp
โ€ข Salt – to taste
โ€ข Black pepper – to taste

How to make:

1. Heat oil in a pot over medium heat.
2. Add onion and cook for 5 minutes until soft.
3. Add bell pepper, garlic, and chili pepper. Cook for another 3 minutes.
4. Stir in tomato paste and cook for 1 minute.
5. Add spices and cook until fragrant.
6. Pour in crushed tomatoes, broth, and beans.
7. Simmer for 25-30 minutes.
8. Add corn, salt, and black pepper.
9. Cook for 5 more minutes until thick.

Serve with:

โ€ข Vegan yogurt or sour cream
โ€ข Guacamole or avocado
โ€ข Cilantro
โ€ข Corn chips
โ€ข A squeeze of lime
