I have tried and failed to make mexican rice for many years. I had given up because my results were always so inconsistent. Then I stumbled across this video. I’ve made it exactly as he describes about five times now, and it turns out perfect every single time. Not dry, not mushy, good flavor, and individual grains that don’t clump together.
One batch makes about eight cups of rice, so I usually freeze about 2/3 of it in two separate ziplocs and just microwave one of them it next time I make a Mexican meal. It reheats from frozen wonderfully.
One note: Get your rice and liquid up to a FULL BOIL before you cover and reduce the heat. You need a lot of carry over heat to make sure everything stays hot enough for long enough for all of the liquid to be absorbed. Otherwise you’ll end up with soggy wet rice. Don’t worry, you’re not going to burn it.

FLAVOR WARNING: THIS RICE IS NOT SUPER FLAVORFUL. In my opinion, it is not supposed to be super flavorful. It tastes good, but it’s a rice side dish to the main event. Adding cumin, extra salt, or anything else you find interesting in your spice rack is encouraged if you want your rice to kick.
