Preparation.
Heat a pan and pour in 10 ml of oil. Put in the 12 shallots and 5 to 6 small potatoes which were peeled . Saute thoroughly till the shallots lose their pinkish color . Add salt to taste and mix . After the mixture has been mashed and cooled mix 200 gms of Chipotle sauce with potato mixture and mix thoroughly .Take 8 pieces of bread .Take a slice of bread . Apply the Chipotle Sauce mashed potato mixture evenly on it. Take another slice and put on top to make a sandwich. Do this with the other slices. In a bowl break 2 eggs. Add salt to the egg mixture . Mix well. Dip the sandwiches in the egg mixture and fry in a heated pan by turning from side to side after applying oil on the pan. Take off the pan and serve
