Are you using iceberg or romaine lettuce at the base of your sope? It looks delicious but might i suggest trying with cabbage and seeing how you like that? Green cabbage or cannonball cabbage is pretty tasty on those, and more in line with traditional mexican cuisine (from my experience).

“nice looking mexican food” is a pleonasm. It is just enough to say “mexican food” to know it is “nice looking” by definition.
