I’m a big fan of ceviches in general and aguachiles are a great example. The ones I’ve had in Sinaloa tend to be more chopped than this to make it easier to serve so if I were to tweak anything I’d probably do that. However, that’s just a small thing that is perhaps a preference for me but this does look delicious.
