As someone who works on the line and LOVES dipping tacos I’m going to guess that taco didn’t maintain structural integrity throughout eating the whole thing.
In my experience, having the cheese go halfway up the shell on both sides insures that your taco won’t fall apart while eating it.
In fact, I think what everyone is doing wrong with these tacos is adding too much cheese. I do feel like I’ve mastered it and I’ve only made then for less than a week, but that taco does look delicious and if it stayed together the whole time good on you

I can only assume that nobody at yum brands has ever eaten a birria taco but instead only read a “vague” reddit description of the dish!

Too expensive for what you get
Mine was literally just a cold shell with a pile of shredded cheese in the bottom of the wrapper. Sibling is a manager at Taco Bell and says they’re a pain to make, but for the cost I wish they’d actually make them right. Yours looks great!

I just tried it for the first time. Got 2 of them and they both came out great. I loved it. I think the price at my location is very reasonable too. $3.89. But I know the price varies by location and area
