It shows I have over 4,000 points, and I’ve only redeemed one cheesy Gordita crunch, and now I’m not able to redeem anything else. Am I not understanding something?

You don’t spend points on rewards. You get rewards for point levels and also the rewards expire.
When your current point total (62 pts) reaches 250, you earn a Reward item which shows up in My Rewards and has only a 1 month redemption window before it disappears. When you reach 250 pts on that counter, it scrolls over and begins another run to 250 toward your next reward. Unless the Rewards function truly is malfunctioning on your app, sounds like your Reward items have been expiring. Sorry, dude. 😞
I had this issues not but a year ago, I just called the app tech support and they added the missing points and extra rewards for the inconvenience.
