

Obligatory OP is a moron. I now live more than an hour from this restaurant, but would still like to have the sauce on this pork dish. Does this look familiar to anyone who can give me some terms to start looking this up. The menu only identifies this as “Number Four” and “Large chunks of choice pork in a spicy sauce.” If you are a native to Kansas City, this is the #4 at Ponaks.

Plating looks a lot like what you’d get in New Mexico, and that’s the description of carne adovada. Basically you make New Mexican red chile sauce and marinate and bake pork in it for several hours.
