My poblanos are in a hydroponics situation and have been taking a long time to reach it's destined size however I don't think they're mature enough to be turning red this early?
Can someone explain ?

Nutrients strength probably too low. Change your water more often.
not enough potassium available, the plant is finishing the fruit
add potassium nitrate
Nope. Never had much luck growing then in 6a or 9b..
