Bharli Vangi (Stuffed Baingan) – Method (Short & Crisp)
1. Grind roasted peanuts, garlic, coriander seeds, jeera, amchur, red chilli powder, and salt into a coarse mix.
2. Slit small brinjals in a cross (keep stem intact) and stuff with the prepared mixture.
3. Heat oil and shallow fry the stuffed brinjals until soft and lightly browned. Remove and keep aside.
4. In the same pan, add jeera, curry leaves, chopped onion, and tomato. Sauté well.
5. Add haldi, red chilli powder, remaining peanut mix, and a little water. Cook for a minute.
6. Add the brinjals, cover and cook until soft and coated with masala. Serve hot.
