Finally made one of my cravings, sopes.

One of my favorite Mexican dishes is sopes. I remember my mom making sopes for me on my birthday as a child and throughout my adolescence, since she knew I loved them. With their spread of beans, shredded meat, cheese, cream, lettuce, and a good salsa, it was a super combination of flavors. The first bite was a trip back in time, just as I remember them, the way my mother made them for me.
