




First time making Pique. Using leftover seeds and tops from other sauces for the two in the mason jars, and whole peppers for the taller bottle. Will the ingredients above the vinegar line get mold? There's a chunk of garlic at the top of the tall bottle that I'm worried is now a chunk of mold lol.
Also, how long can/should this sit for? Internet is saying anything from 1 week to infinite as long as you keep adding vinegar when it gets low. Any and all advice is appreciated, thanks!

You do want to try to keep the ingredients submerged. You can buy glass weights on Amazon for not too much that do a good job.
