Spanish GARLIC Chicken One of Spain’s Most Iconic Recipes #shorts



Learn how to make the ultimate Spanish Garlic Chicken recipe (Pollo al Ajillo). An authentic, mouth-watering, and incredibly easy one-pan chicken dinner that combines crispy seared chicken with a rich, glossy garlic and white wine reduction sauce.

INGREDIENTS:
– 1 kg chicken pieces (bone-in, skin-on for maximum flavor)
– 10-12 cloves of fresh garlic (gently crushed with the skin left on)
– 4 tablespoons extra virgin Spanish olive oil
– 1/2 cup of dry white wine
– 1 tablespoon fresh rosemary or thyme (optional)
– Fresh parsley (finely chopped)
– Sea salt and black pepper to taste

INSTRUCTIONS:
1. Heat the extra virgin Spanish olive oil in a wide pan over medium heat. Add the gently crushed unpeeled garlic cloves. Fry them slowly for 3-4 minutes until they are golden brown and have infused the oil. Remove the garlic from the pan and set aside.
2. Season the chicken pieces generously with sea salt and black pepper. Turn the heat up to medium-high and place the chicken in the infused oil. Sear for about 6-7 minutes per side until the skin is beautifully crispy and golden brown.
3. Add the fried garlic cloves back into the pan with the chicken. Pour in the dry white wine and fresh herbs, scraping up all the delicious browned bits from the bottom of the pan.
4. Reduce the heat to medium-low and let it simmer for 10-12 minutes until the alcohol evaporates and the liquid thickens into a rich, glossy garlic sauce. Garnish with fresh parsley and serve hot!
