Amritsari Paneer Bhurji

Ingredients

* 250g paneer, grated
* ½ cup curd (thick)
* 1 medium onion, finely chopped
* 2 medium tomatoes, finely chopped
* 2 green chillies, finely chopped
* 2 tbsp butter + 1 butter cube
* 1 tsp cumin seeds (jeera)
* ½ tsp red chilli powder
* 1 tsp coriander powder
* ¼ tsp turmeric powder
* ½ tsp garam masala
* 1 tbsp roasted besan
* 1 tbsp hot oil (garam tel)
* 2–3 tbsp milk
* Salt to taste
* Fresh coriander leaves, chopped (for garnish)

Recipe

1. In a bowl, mix curd with red chilli powder, coriander powder, turmeric, garam masala, roasted besan, and hot oil until smooth.

2. Heat butter in a pan and add cumin seeds. Once they crackle, add chopped onions and sauté until light golden.

3. Add green chillies, chopped tomatoes, and salt. Cook until the tomatoes become soft and mushy.

4. Add the prepared curd mixture and cook on medium flame for 4–5 minutes, stirring continuously until the masala thickens and the oil starts separating.

5. Add grated paneer and milk. Mix gently and cook for another 2–3 minutes without overcooking the paneer.

6. Finish with a butter cube and garnish generously with fresh coriander. Serve hot with butter naan, kulcha, paratha, or toasted bread
