



OK so last night I went for the Bulduk 3x (two packets). I was pretty nervous about it, because even though I enjoy the 2x a lot, the 2x is still something of a challenge. But last night I was in the mood and went for the 3x after a couple of beers.
I had three pints of milk and a 500g pot of plain yoghurt and some Gaviscon for aid. In the end, the Gaviscon wasn't used at all, and the milk hardly was, but the yoghurt was definitely the best thing I had to hand.
When I started on the Bulduk, it was hot, sure, but after a while it was different to the 2x. I could taste the chicken flavour, but the heat became a full-on assault. Rather than being the slow ramping chilli of the 2x, it basically lit up my whole face. It was a very intense heat. But it tasted nice so I persisted.
About 3/4 of the way through I had to take a break. I was unsure if I could finish the whole thing but I thought, "I've come this far, I may as well go all the way". I finished the whole thing and then found myself devouring 90% of the 500g pot of plain yoghurt. It was an interesting experience.
Fast forward to today. Slept fine, I feel fine (I think the yoghurt helped massively) but I was left with a pan of unwashed noodle sauce. I then thought, "why not deglaze it with the chilli bean soup in the fridge?" which is what I did. I didn't have much else in the fridge or cupboard but I DID have the remainder of the yoghurt and some dry roasted nuts.
I warmed the soup and put the remainder of the yoghurt in and some of the nuts – even though this sounds weird (and looks weird) it was absolutely delicious. It was a great way to finish off the event – the soup WAS hot but I would say only about 1/8 of the heat of yesterday's meal.
So – would I do this again? No. The 3x is hot – extremely hot – too much so to be anything I would eat again. It's fun as an experiment but it's the culinary equivalent of being hit by a chilli-pepper-shaped juggernaut. The 2x is where it's at – tasty and just enough challenge to be fun.

Just as a side note, that’s not how you deglaze a pan. The pan needs to be hot and you would generally add wine, Stock or water to get all the browned bits from the bottom of the pan. You would’ve been better off heating the soup up in that pan for the same result.
