From Pyeongtaek Startup to New York Michelin Kitchens: The Rise of Chef Peter Jang

How a young chef from Gyeonggi Province carried Korean culinary tradition to the highest stage in American fine dining

Wonseok (Peter) Jang’s path to one of the most prestigious kitchens in the United States did not begin in a fine dining restaurant. It began in a government-backed incubation program in Pyeongtaek, South Korea, where a young chef armed with raw talent, culinary skill, and unbridled ambition took a chance on himself and proved he was ready for something far bigger.

A Government Program That Shaped a Chef

In the summer of 2021, Jang was selected to participate in the Youth Kium Restaurant program, a food service incubation initiative operated by the Korea Agro-Fisheries Food Trade Corporation in partnership with the Korea Food Culture Design Association and the Pyeongtaek Local Food Foundation. 

 

The program was created in direct response to South Korea’s notoriously high restaurant failure rate, with approximately 80 percent of new food businesses closing within their first few years. Its purpose is to place talented young entrepreneurs in fully equipped commercial kitchens, providing them with the education, mentorship, and real-world experience necessary to succeed in one of the country’s most competitive industries. Admission is selective, requiring a formal business proposal and evaluation by an expert advisory committee.

 

Jang was admitted to the second cohort of the Pyeongtaek branch as the culinary leader of his team, which developed and operated a Japanese sushi concept called “The House with the Best Sushi.” Even as the youngest member of his team, Jang shouldered the restaurant’s most demanding responsibilities. 

 

His cross cultural fluency was evident from the start. His preparation of soba and udon broths from scratch, his refined sushi program, and his consistent execution of complex seafood dishes demonstrated something that goes beyond technique: a deep, instinctive understanding of how ingredients should be treated and culinary storytelling rooted in tradition. He brought the same seriousness to the business side of the operation, developing skills in accounting, tax management, branding, menu development, and commercial market analysis. 

 

Under his leadership, the team generated approximately 23 million Korean won in revenue over the three-month program. It was a concrete measure of his ability to translate culinary artistry into commercially viable execution, and an early signal of the professional he would become.

 

Jungsik New York: The Stage He Was Built For

After completing the program, Jang pursued formal culinary training at the Culinary Institute of America in New York and went on to build his career in the city’s most demanding fine dining kitchens. In October 2023, he joined Jungsik New York as Chef de Partie, taking his place in the kitchen of the first and only three-Michelin-starred Korean restaurant in the United States.

 

Jungsik is internationally recognized as the defining institution of “New Korean” cuisine, a philosophy that honors the full depth of Korean culinary heritage while elevating it through rigorous contemporary technique. It is a kitchen built on the conviction that Korean tradition belongs at the highest table in the world, and it requires chefs who carry that tradition not just as a skill set, but as a living understanding. 

 

Jang was entrusted with the fish station, the most consequential position in a restaurant whose signature tasting menu is built around seafood and whose plates are the primary vehicle through which its culinary philosophy is expressed. His mastery of the Octopus with gochujang aioli, Arctic Char with perilla oil sauce, and Black Cod with doenjang and clam foam reflects a chef who understands Korean fermented ingredients at a cultural level that technique alone cannot produce. Executive Chef Daeik Kim has called him one of the most indispensable members of the brigade. 

 

Chef de Cuisine Wonsuk Jeong selected him as Jungsik’s Employee of the Year at the close of 2025, an award chosen by senior chefs for the individual who most distinguished themselves in technical skill, consistency, and leadership over the course of the year.

 

A Defining Night on the World Stage

The fullest expression of what Jang brings to this kitchen came in December 2025, when he was selected for a critical role in the Jungsik New York x Jungsik Seoul Michelin Collaboration Dinner. The two-night, invitation-only event was presented as part of the Capital One International Chef Series and publicly promoted by the Michelin Guide as a major international culinary collaboration. The guest list included Michelin inspectors, international culinary press, food and beverage executives, and world-renowned chefs. 

 

Jang was assigned three consecutive courses of the tasting menu: the Octopus, the Abalone, and the Arctic Char. He was responsible for more courses than any other individual chef on the line. For the Abalone, a Jungsik Seoul signature, he developed an original finishing technique in real time, emulsifying the abalone cooking liquid with oil and applying it as a fine spray over live charcoal to achieve a clean smoky aroma without leaving a single mark on the surface. On both evenings, every plate left his station with the precision and elegance that a three-Michelin-star kitchen demands.

 

Carrying Korean Cuisine Forward

Chef Jang’s trajectory from Pyeongtaek to the most decorated Korean restaurant in America is the story of a chef who arrived with three things that are rarely found together: mastery of Korean culinary tradition, the entrepreneurial discipline to understand the business of food, and the ambition to bring both to the world’s most demanding stage. At Jungsik, he is not simply executing dishes. He is carrying the future of Korean fine dining, executing cuisine at the highest level before the most discerning guests in the world. For the Korean culinary community in the United States and beyond, his story is one worth watching closely.
