This Sweet Chili Chicken recipe is super simple, healthy and fresh for the summer. Perfect to cook with kids…and they will also love eating it.
I make it with chicken thighs (and not chicken breasts) and it’s fabulous.

Ingredients:
For 4 people
8 chicken thighs
1 cup sweet chili sauce
juice of 1 lime
Oven: 180°/ 365°F for 25 minutes with the fan
Then decrease to 165°C/330°F and cook for another 25 minutes with the fan
For the rice:
Rice: 200g – 1 cup
Sultanas: 150g – 1 cup
1 Tbsp turmeric
Almond flakes: 150g – 1 cup
Fresh coriander, chopped
To serve:
4 carrots, peeled and sliced
Lettuce leaves
