A bunch of non traditional stuff I guess. I made a dish I called chicken birria last night, chicken stewed in a birria-like consume it made a nice dinner. Today I turned the left overs into chiliquilles-like dish with melted cheese all over. Wet nachos? Whatever you call it, it was tasty.

Honestly sometimes we make up dishes too with whatever ingredients we have at home. This would be something my mom would put together randomly for a meal if she had the ingredients in front of her. She would also call it something she made up.

Chilaquiles de birria are not that crazy, and chilaquiles “gratinados” (melted cheese) are common too.
The only weird thing is chicken birria which is not common but it all looks very tasty.
