🍜 Manchurian Balls
▶ Finely chop capsicum, carrot, cauliflower, cabbage, and spring onion.
▶ Add salt, mix well, cover, and keep aside for 15 minutes.
▶ Squeeze out all the water from the vegetables and transfer them to a bowl.
▶ Add 1 tsp ginger, 1 tsp garlic, 1 tsp green chili, a little black pepper, 2 tbsp soy sauce, 2 tbsp green chili sauce, and 2 tbsp red chili sauce. Mix well.
▶ Add maida and corn flour in a 1:2 ratio (1 tbsp maida, 2 tbsp corn flour) as needed. Mix until the vegetables bind together.
▶ Wet your hands and make Manchurian balls.
▶ Fry on medium flame until golden brown. Remove and keep aside.
🍲 Veg Manchurian Gravy
▶ Heat oil in a pan. Add finely chopped ginger, garlic, and green chili. Sauté for 10 seconds.
▶ Add chopped capsicum, onion, cabbage, and carrot. Sauté on high flame for 2 minutes.
▶ Add 1 tbsp vinegar, 1 tbsp soy sauce, 1 tbsp green chili sauce, and 1 tbsp red chili sauce. Add Ajinomoto (optional). Cook for 2 minutes.
▶ Add some water and bring it to a boil.
▶ Mix 1 tbsp corn starch with a little water to make a slurry.
▶ Add 2 tbsp slurry to the boiling sauce and mix until the gravy thickens.
▶ Add the fried Manchurian balls and mix well.
▶ Cook for 1 minute and turn off the flame.
▶ Restaurant-Style Veg Manchurian is Ready to Serve!
