  2. I know the NCHFP says to cover the bowl with a towel, but cover with plastic wrap instead for an even better steam on those skins!

    I canned a whole bunch of roasted, peeled and diced Hatch peppers and jalapenos (separately) last year in 4 ounce jars. I wanted to replicate the little cans you buy at the grocery store. I seeded and diced the peeled peppers and filled the jars, just adding a pinch of salt and maybe a teaspoon or two of water. It's a totally approved method. The processing time for pints and half pints is 35 minutes, but with such a small amount I reduced the time to 25 minutes. They turned out BEAUTIFULLY! Twelve jars of Hatch peppers and 16 jars of jalapenos. I use them for scrambled eggs, refried beans, queso sauce or adding to hot sandwiches or even on homemade pizzas. It is not a quick job, but definitely worth doing and so satisfying, especially since a little can of jalapenos is now over $1.00 and the Hatch peppers are over $2.00! I'm definitely going to do more in August.

    (Actually this year I'm going to par-cook some diced onion, mix the two, and make a batch of half-pints with roasted peppers and onions. That'll save another step in any Mexican dish I cook.)๐Ÿ˜Š๐ŸŒถ๏ธ๐Ÿง…
