Ingredients:
Pala Chhatu (Paddy Straw Mushrooms): 250g
Onion: 1 large (finely chopped)
Green Chillies: 2 to 3 (slit lengthwise)
Mustard Oil: 2 tsp (for that authentic, rustic aroma)
Turmeric Powder: ½ tsp
Black Pepper Powder: ½ tsp
Salt to taste
Method:
Clean & Prep: Wash the fresh paddy straw mushrooms thoroughly in water mixed with a pinch of turmeric to remove any organic residue. Drain completely and chop them into bite-sized pieces according to your preference.
Sauté the Aromatics: Heat mustard oil in a pan over the traditional open flame. Once hot, add the finely chopped onion and slit green chillies. Sauté for about 1 minute until fragrant.
Toss the Mushrooms: Add the chopped mushrooms into the pan. Season with salt and turmeric powder, stirring gently to combine everything well.
Simmer in Natural Juices: As the mushrooms heat up, they will naturally release their own water. Cover the pan and let them cook over medium heat until all the moisture evaporates completely.
Crisp & Finish: Once the water dries up, let the mushrooms fry gently until they turn a beautiful, light golden-brown color. Dust with black pepper powder, give it a final toss, and take it off the fire. Serve hot!
