Why are some plants kicking ass while others die?

I’m running a hydroponic grow in coco coir. South Texas. 100 degrees. Majority of plants are shishitos but I have jalapeños and tomatoes as well. All on same fert 2.0 EC and 5.8 ph.

The old shishitos got burnt from too high N and are now rebounding slowly but surely. Leaves are smaller but strong and good fruit set. Picture 1.

The young shishito were just doing fantastic. Big broad leaves and dark green, great flower set. But now with this heat they’re almost all wilting real bad. Picture 2-3

Cherry tomato plants were planted recently, they have boomed and make me think I am doing things correctly. Picture 4

Are peppers and tomatoes have that different of needs just to have a happy plant? I understand difference in production but I don’t understand why this aggressive of a difference.
