
Hear me out – duck in pozole rojo. I’m Mexican and duck isn’t suuuuper popular or traditional (in my experience) but I’ve been testing out duck in different recipes: enmoladas, tacos, I made duck tamales over the weekend and had some leftover duck broth, meat and sauce….and some hominy sooooo: pozole!
The broth is so rich that it goes super well with the guajillo and pasilla red salsa. Add the radishes and oregano and oh yeah, I’ll be making this again.
