I was able to get a single hong-gochu plant at a small sale this spring. The plant is doing amazing and has about 20-30 peppers on it but I have no idea when they are ripe. Some are starting to turn red and I know the paste is red but do they ripen on the plant?
Excited to have more, I tried one and it has great heat. Any help on when to harvest would be greatly appreciated!

Yes.. let them ripen on the plant if possible.
(Hong-gochu (홍고추) literally translates to “red pepper”.)
Looks like it 🔑 unlocks some spice 🫠
