1 cup toor dal (arhar dal) (you can mix with moong dal too)
• 2 cups fresh palak (spinach) (washed & chopped)
• 1 onion (finely chopped)
• 2 tomatoes (pureed or finely chopped)
• 1 tbsp ginger-garlic paste
• 2 green chilies (chopped)
• ½ tsp turmeric powder
• 1 tsp red chili powder
• 1 tsp coriander powder
• Salt to taste
• 2 tbsp ghee or oil
• 1 tsp cumin seeds
• 1 pinch hing (asafoetida)
• 1 tsp garam masala
• 1 tbsp butter (optional for richness)
• Fresh coriander for garnish

1️⃣ Cook the Dal:
• Wash dal and pressure cook with:
• 3 cups water
• Turmeric
• Salt
• Cook until soft and mash lightly.

2️⃣ Prepare Palak:
• Blanch spinach in hot water for 2–3 minutes.
• Transfer to cold water, then grind into a smooth puree.

3️⃣ Make Masala:
• Heat ghee in a pan.
• Add cumin seeds + hing.
• Add chopped onion → sauté till golden.
• Add ginger-garlic paste + green chilies.
• Add tomatoes → cook until oil separates.

4️⃣ Add Spices:
• Add red chili powder + coriander powder.
• Mix well and cook 1–2 minutes.

5️⃣ Combine Everything:
• Add cooked dal + palak puree.
• Mix well and adjust consistency with water.
• Simmer for 5–7 minutes.

• Add garam masala + butter.
• Garnish with fresh coriander.

• Add a smoky flavor by giving a dhungar (coal smoke) at the end.
• For extra taste, temper with garlic & dried red chili in ghee and pour on top.
