
I made my go to fresh salsa and then I decided to add Arbol chilies to some of the salsa and make it into a sauce for street tacos (I realize this isn’t traditional chill de arbol but it was close enough with little effort). I got so many compliments on both. I cooked the Arbol chilies in grapeseed oil, added them to a cup of hot water to soften. Removed the seeds. Added the chilies to the blender with a cup or two of the salsa and the oil from the pan. Yum.

**Salsa Rojas (Fresh Red Salsa)**
1/4-1/2 white onion
3 large cloves of garlic peeled
2 Serrano chilies seeds removed and diced.
1 jalapeño chili -optional
4 Roma tomatoes or any ripe tomatoes (3 tomatoes on the vine)
1 can diced tomatoes
1 tbsp. + Tomato paste
1/4-1/2 bunch of cilantro with stems-chopped ( amount depends on size of bunch).
Juice of 1 lime
2-3 tsp. Pollo seasoning
1/4 tsp. Garlic salt
Salt to taste
Diced green onions optional
Pulse garlic, onion,
Serrano chilies and lime juice together in blender 2-3 pulses until jalapeño are rough chopped- do not over pulse. Should be in chucks. Add tomatoes, diced tomatoes,
Cilantro, and all seasonings. Pulse again, just until everything is in small chunks. Add diced green onions. If salsa is too thick, add a little water.
